With it being the height of autumn, and with temperatures dropping quite suddenly in the last week or two, my food and drink cravings are starting to shift. So when I was asked to share my own twist on a classic cocktail recipe from their collection, I overlooked some of the favourites from summer days and gravitated towards the warming, comforting, espresso infused pumpkin spice latte, which to my delight contained Baileys… so suddenly everything that is good and wonderful is sitting there in one drink.

Let’s break this amazing concept down.

-–> PUMPKIN SPICE. Because it’s autumn and those leaves are out! I’ve been going for a lot of walks this autumn, and really taking notice of this season that used to pass me by a little (when I was working a 9-5 and saw very little daylight at this time of year). It really is beautiful isn’t it?

As you can see though, under my care, the pumpkin spice latte has morphed into sweet potato spice latte! How did that happen? Well, I never get a Halloween pumpkin because I am terrible at carving, and I don’t want to pay a premium for imported canned pumpkin puree. Not when there is such a perfect alternative that is always in my refrigerator in the form of the sweet potato. It lends a very similar flavour, but is so much more accessible. By using sweet potato, you can conjure up that magic autumnal feeling all year round.

–> COFFEE. Yes pleeeeease. That touch of bitterness plays beautifully with the spices and sweet elements of this recipe.

–> BAILEYS. Well now we’re talking. I can never, ever resist a cocktail with Baileys. It goes down beautifully, and I find it such a fun and distinctive flavour to play with and mix with new things. And because everyone pretty much adores it, it’s one of those ingredients that instantly makes things feel special and celebratory.

Lovely readers, judging from how popular my Baileys Chocolate Dessert Pots were, I think you feel the same way about Baileys. So this recipe really excited me, and I was not disappointed.

I was surprised by the simplicity of this recipe; it’s super easy despite the fact that we are smuggling actual sweet potato into the latte, and using fresh spices instead of relying on a pre-prepared blend or a syrup.  The sweet potato is an economical, versatile, healthy vegetable that add a natural sweetness to this drink which means no sugar is needed beyond what’s in the Baileys. Totally winning.

Move over pumpkin spice, I think the sweet potato latte is a keeper. I hope you love it as much as I do.

Sweet Potato Spiced Latte with Baileys

Ingredients

  • 50 ml Baileys Irish Cream
  • ½ shot espresso
  • 2 Tbsp cooked and pureed sweet potato
  • 150 ml milk
  • ½ tsp vanilla extract
  • ¼ tsp cinnamon
  • ¼ tsp ground ginger
  • ¼ tsp ground nutmeg
  • A few whole cloves

Instructions 

  • Pour the espresso and Baileys into a large mug or latte glass.
  • In a small saucepan, heat the pureed sweet potato, vanilla and spices until fragrant. Whisk in the milk and keep over the heat, whisking constantly, until warm and frothy. Sift out the cloves and pour into the mug on top of the espresso / Baileys mix.
